What's For Dinner?

My blog has been neglected this past month. Sorry friends!  I know you have been dying to see what I've been up to these past few weeks ;)  Yes, my life is THAT interesting.  Hahaha, I am totally kidding.  Those of you who follow me on here.  Thank you!  I enjoy knowing that people actually read this thing.  I'm going to make this post some what quick because I have dinner in the oven and a handsome husband who is on his way home.  It's been so nice to get back on a schedule since the holidays are over.  Eating healthy is something I miss after being out of town for weekends at a time.  We tend to grab snacks when we are on the road and splurge when we visit family....something I enjoy VERY much.  But when I get home I'm so excited to detox a little bit.  I recently discovered how helpful Pinterest is in finding new and healthy recipes.  I love it.  I found an incredible spaghetti squash recipe where you eat out of the rind...great presentation and it's good for you too.  Tonight's dinner I actually discovered without Pinterest.  I needed to make a vegetarian meal for a friend and her husband who just had a baby and I came across an easy Mexica lasagna dish....SUPER easy and healthy.  if you are one who prefers a more hardy meal...add some beef to one of the layers.
